This Salmon Bowl recipe is super easy, really filling and flavorful. The best part is, you probably already have most of the ingredients on hand. You cab also use this bowl to load up whatever additional veggies you have. You could also easily plus up this recipe and cook for a family, too.
Ingredients:
- 1 egg
- Handful of kale
- 1 piece of salmon — I used frozen
- 1 cup of Uncle Ben’s Minute Rice
- 1 avocado
- Soy sause
- Trader Joe’s Everything but the Bagel Sesame Seasoning
- Salt & Pepper
- Olive oil
Instructions:
- Thaw salmon if frozen.
- Turn the oven on broil.
- Bring pot of water to a boil.
- Season salmon with olive oil, salt, parsley and lemon.
- Broil salmon for 7-9 minutes or until cooked through and flakey.
- Add egg to boiling water. Turn down heat and cook on low for 10 mins.
- Pop the rice into the microwave right before plating.
- Massage the kale. If you don’t know what this is, you add a little bit of oil oil and salt to the kale and need it for a few minutes to help make it more tender and less bitter.
- Add kale, rice, salmon, egg and avocado to a bowl.
- Top with soy sauce, lemon juice and Everything But The Bagel seasoning.
